Rice Fritters with a Balsamic Basil Sage Aioli
These rice fritters are a great dish to make with leftover rice. In this case, the leftover rice had chicken, carrots, onion, celery, and mushrooms, which made for a really tasty fritter.
These happen to be savory fritters as well, but you could just as easily turn them into a dessert if you have plain leftover rice.

Start by making a quick aioli by mixing mayonnaise, balsamic vinegar, olive oil, basil, sage, salt, and pepper.
Next, mix your cooked rice with 1 egg, a dusting of flour (not too much), grated parmesan cheese, salt, and pepper. Next, form the rice into individual balls, and roll them in flour so that they are completely coated.
Next, shallow fry your rice fritters in olive oil (you could also deep fry them if you prefer), until they’re golden brown on all sides.
Remove from the oil, and let them drain before serving.
