Oatmeal Raisin and Banana Fritters

These tasty oatmeal fritters are like an oatmeal pancake, and they’re great for breakfast or brunch.

This recipe makes about a dozen.


  • 1 cup oatmeal

  • 1 3/4 cups water

  • 1/8 tablespoon salt

  • 1 egg

  • 3 tablespoons honey

  • 1/4 teaspoon vanilla extract

  • Butter

  • 1/2 cup raisins

  • 1 banana

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 3 tablespoons flour

  • 1/4 teaspoon baking powder

  • Maple syrup

  • Strawberries

  • Mint


Start by making your oatmeal. To do so, mix 1 cup of oats with 1 3/4 cups of water, cinnamon, nutmeg, and salt. Microwave this for 2 minutes, then allow it to cool for a bit.

When your oatmeal has cooled a bit, add your honey, vanilla, raisins, chopped banana, baking powder, and flour. Mix together, then add your egg, and mix it until it’s well incorporated.

Next, heat butter in a pan, and spoon your fritters in, as if you were making small pancakes. Fry these until they’re golden brown on both sides.

When your fitters are done, finish with a bit of maple syrup, chopped strawberries, and mint.
