This recipe makes about a dozen. Ingredients 1 cup oatmeal 1 3/4 cups water 1/8 tablespoon salt 1 egg 3 tablespoons honey 1/4 teaspoon vanilla extract Butter 1/2 cup raisins 1 banana 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 3 tablespoons flour 1/4 teaspoon baking powder Maple syrup Strawberries Mint Directions Start by making your oatmeal. To do so, mix 1 cup of oats with 1 3/4 cups of water, cinnamon, nutmeg, and salt. Microwave this for 2 minutes, then allow it to cool for a bit. When your oatmeal has cooled a bit, add your honey, vanilla, raisins, chopped banana, baking powder, and flour. Mix together, then add your egg, and mix it until it’s well incorporated. Next, heat butter in a pan, and spoon your fritters in, as if you were making small pancakes. Fry these until they’re golden brown on both sides. When your fitters are done, finish with a bit of maple syrup, chopped strawberries, and mint.
