Gnocchi with Garlic Parmesan and Parsley Cream Sauce
This is a simple gnocchi recipe that makes a great dinner.

Start by microwaving a potato for 3-4 minutes until it’s fully cooked. Let it cool, then peel it, and mash it in a bowl.
Season it with a bit of salt, then add an egg, and gradually add flour to form a pasta dough. Turn the dough onto a surface and knead it briefly (it will come together very quickly).
Next, roll the dough out into an even cylinder, then cut it into even segments. To form the gnocchi, place a fork (tine-side down) on a surface, with the bottom side of the fork facing away from you. Roll each segment onto the bottom side of the fork, and press firmly enough to form ridges on the front, and a dimple on the back.
When your gnocchi are formed, boil them in salted water.
When the gnocchi are cooked, sauté them in olive oil and garlic, and deglaze with white wine. Reduce the heat, add a knob of butter and a bit of cream or milk (just a little), along with chopped parsley, and season with salt and pepper.
Next, remove the gnocchi from the heat, drizzle with lemon juice, and add grated parmesan cheese. Serve and enjoy.
