This dish couldn’t be easier, and it makes a delicious breakfast.


  • 1 Egg (per person)

  • Bread (1 slice per person)

  • 12-18 Mushrooms

  • 2 tablespoons Goat Cheese

  • 1 clove Garlic

  • Cream (3-4 tablespoons)

  • 1 tablespoon Butter

  • 2 tablespoons White Wine

  • Nutmeg (a pinch)

  • Lemon juice (a few drops)

  • Parsley

  • Olive oil

  • Salt (to taste)

  • Pepper (to taste)


Start by sautéing minced garlic and sliced mushrooms in butter, and a bit of olive oil, until they’re caramelized. Add a touch of nutmeg, along with salt and pepper, then, deglaze the pan with white wine, and let it reduce.

Next, reduce the heat, and add your cream, and goat cheese. Allow everything to come together then remove it from the heat, drizzle in a bit of lemon juice, along with a small handful of chopped parsley. Then, set it aside until everything else is ready.

Next, fry an egg in a bit of olive oil, and toast your bread.

When your egg and toast are ready, give your mushrooms a mix (and check for seasoning – add salt, pepper, and lemon juice as needed), then add some of the mushrooms to the bottom of your plate. Place your toast on top of the mushrooms, then add more mushrooms on top of the toast. Add, you egg on top, then finish with more mushrooms, and chopped parsley.
