Chicken noodle soup can be great anytime of year, but when the weather starts to get colder, a bowl of this really hits the spot.
If you’d like to make your own noodles as well, the fettuccine recipe here works great (just cut the noodles a bit thinner).
Start by chopping your vegetables into medium chunks, and add them to a pot with your chicken. Fill everything with enough water to cover it, and add a bit of white wine. Next, bring it slowly to a boil, then simmer for two or more hours.
When your soup is about ready, remove your chicken, let it cool slightly, then bone it and add the meat back to your soup. Next, season with salt and pepper, then add your noodles (homemade noodle recipe).
When the noodles are fully cooked ladle your soup into bowls, then drizzle it with lemon juice, and add grated parmesan cheese.
