Ingredients 2 Eggs Parmesan cheese Milk Spinach Nutmeg Sour cream Butter Cayenne pepper Olive oil Salt Pepper Directions Start by sautÃ©ing your spinach in a bit of olive oil until it’s wilted (this is very quick). Then add a pat of butter, a touch of ground nutmeg, salt, and pepper, and remove it from the heat. Mix in freshly grated parmesan cheese, a splash of milk, and a dollop or two of sour cream. Mix it until everything is well incorporated, then set it aside until you’re ready. Next, scramble and cook two eggs, season with salt and pepper, and transfer them to your plate. Top with your creamed spinach, and more parmesan cheese, serve and enjoy.
