This is a simple and healthful breakfast or brunch dish, and the crispy kale adds great texture.
3 large Kale leaves
1 clove Garlic
1 tablespoon butter
Salt (to taste)
Pepper (to taste)
Start by cutting your kale into bit-sized pieces. Place the kale on a baking sheet, drizzle with olive oil, season with salt, and pepper, then bake it at 350 degrees for 15-20 minutes (until it’s crispy).
Next, sauté minced garlic and finely diced mushrooms in butter, and a bit of olive oil, until it’s lightly caramelized. When it’s done, season it with salt and pepper, then set it aside.
When your kale is a couple minutes from being done, fry your eggs in olive oil until they’re done to your liking, then season with salt and pepper.
When you’re ready to serve, place an egg on each plate, add some crispy kale, then finish with your sautéed mushrooms.
