This is a quick dish with some locally made coppa. It’s simple and easy to make, but makes a great lunch or appetizer.

Start by sautéing or grilling slices of bread drizzled with a bit of olive oil.
When the bread is done, spread a bit of goat cheese on it, then layer with a slice of tomato, some coppa (or prosciutto), basil, and drizzle with olive oil.
