Broccoli Slaw with Carrot Ginger Cilantro and Sesame Seeds
Broccoli stalks make a great coleslaw, and this is a really flavorful dish.
White Wine Vinegar (or plain vinegar)
Salt (to taste)
Pepper (to taste)
Start by peeling several broccoli stalks, along with a carrot. Cut them into equal lengths and then julienne the broccoli stalks and carrot. Next, whisk a couple of table spoons of mayonnaise with your vinegar, sriracha, olive oil (it doesn’t need a lot), salt and pepper. When it’s smooth, add minced ginger and finely chopped cilantro, and a tablespoon or two of sesame seeds.
Next, toss in your broccoli and carrot and mix again so that everything is well coated. You could also add a pinch of sugar to this dish. It really just depends on the sweetness of your broccoli and carrot.
Lastly, it’s a good idea to let this sit for at least 20-30 minutes if you have time. That will allow the flavors to really come together.
