Artichoke Red Onion and Goat Cheese Pizza with Arugula
This is a delicious artichoke and goat cheese pizza that’s great in spring or summer.

Start by making your artichoke sauce. To do this, purée artichoke hearts with sautéed onion, garlic, white wine, white wine vinegar, salt, and pepper. Stir in a bit of cream at the end (not too much), then set it aside.
Next, roll your dough out fairly thin, and use a fork to poke holes in the middle of the pizza (where the toppings will sit).
Brush a bit of olive oil over the crust, then add your sauce. Next, add sliced onion, garlic, and chopped artichoke hearts. Add dollops of goat cheese, and grated parmesan cheese, then bake it in a preheated oven at 450-500 degrees for 8-10 minutes (depending on the thickness of the crust) until the crust has a nice color.
When the pizza is done, finish with fresh arugula and basil.
