This is a delicious pasta dish that’s simple enough to make any day of the week.
4 tablespoons White Wine
3 cloves Garlic
4 tablespoons Goat Cheese
2 tablespoons Butter
6-8 tablespoons Cream
1 Egg Yolk
Salt (to taste)
Pepper (to taste)
Start by cooking your pasta in salted, boiling water.
While the pasta is cooking, sauté finely diced onion, and sliced garlic in a bit of olive oil. Season with salt and pepper, and when the onions are translucent, deglaze the pan with a bit of white wine.
Allow the wine to reduce, then reduce the heat and add your butter. Mix in the butter, then add your cream, bring everything together, then set it aside until your pasta is ready.
When your pasta is done, strain it then add it to your pan with the sauce, and toss everything together.
Allow the pasta to cool in the pan for a bit (off of the heat), then mix in an egg yolk, along with grated parmesan cheese. Check for seasoning, and add salt and pepper as needed, then mix in sliced basil and several drops of lemon juice.
Finish with more basil on top, then serve and enjoy.
