Garlic Chive Potato Blinis with Smoked Salmon and Creme Fraiche
Blinis are a great, versatile hors d’oeuvre, and in this recipe, the classic combination of smoked salmon and crème fraiche sits on top of a garlic and chive, potato blini that makes a great small bite.
Salt (to taste)
Pepper (to taste)
Start by peeling and boiling two medium-sized potatoes. When the potatoes are cooked through, mash them in a bowl with butter, milk, salt, and pepper until very smooth.
Let the mixture cool a bit, then add two eggs, 1/4 to 1/2 of a cup of flour, and 1/2 to 3/4 of a cup of milk, and mix well. Add flour and milk as needed to bring the mixture to the consistency of pancake batter, then add minced garlic and chopped chives.
Next, add butter to a heated pan and pour your batter into mini pancake circles.
When your blinis are done, let them cool, then add dollops of crème fraiche, smoked salmon, and garnish with capers and chives (dill also works great).
