Egg Cheese and Tomato Sandwich on a Homemade Kaiser Roll

I love breakfast sandwiches with eggs and cheese. In this case, I found some locally made cheese that’s kind of a mix between Monterey Jack and Havarti (either of which would work great), but feel free to use any cheese that you like.

Ingredients

  • Eggs (2 per sandwich)

  • Cheese (any kind that you like that melts well)

  • Tomato

  • Basil

  • Olive Oil

  • Kaiser roll (Kaiser roll recipe)

  • Salt (to taste)

  • Pepper (to taste)

Directions

Start by toasting your bun in a dot of olive oil or butter in a pan, then set it aside.

Next, scramble your eggs with a bit of cheese, salt, and pepper, and cook on medium to low heat until done.

Finish by assembling your sandwich with a slice of tomato, a little basil (a little mayonnaise is good too if you like it), and enjoy.
