Yield: 4 pieces of toast Ingredients Bread 2 tablespoons Goat Cheese 2 tablespoons Mayonnaise Chives ¼ Cucumber Basil Mint Olive Oil White Wine Vinegar Honey Thai Basil Flowers (optional) Salt (to taste) Pepper (to taste) Directions Start by cutting your bread into even, rectangular pieces then sautÃ© them in a bit of olive oil, until they’re toasted on both sides. Next, peel and finely dice your cucumber (micro dice). Mince basil and a mint leaf, then mix it with the cucumber, along with vinegar, olive oil, a dot of honey, salt, and pepper. Next, mix your goat cheese and mayonnaise together until it’s well-incorporated, and smooth. Finish by mixing in finely diced chives, salt, and pepper. To plate, spread the goat cheese mixture evenly over each piece of toast, followed by your cucumbers. Finish with a chive and a Thai basil flower (optional), serve and enjoy.
