This is a quick sandwich with great flavors, and it makes a great spring or summer lunch.
Vinaigrette (olive and vinegar and anything else that you would like to add)
Salt (to taste)
Pepper (to taste)
Start by cutting the crust off of your bread (this is optional), and cutting your cucumber into very thin slices.
Next, mix your cream cheese and goat cheese together until they are well mixed. You could also just use one cheese or the other, depending on your preferences.
Lastly, make a quick vinaigrette and dress the sliced cucumbers lightly.
Assemble the Sandwich
Start by spreading the cheese on each slice of bread, followed by a layer of cucumbers, and finally a layer of basil leaves. The aim is to evenly distribute each layer to the edge of the bread. You can also make multiple layers if you like.
Once your layers are complete, you’re ready to top off your sandwich with the remaining slice of bread, and enjoy.
